  1. heat olive oil (54 g) in pan, add onion (1) and garlic (6 cloves). sauté for 1 minute.

  2. add the rice (190 g), tomato paste and seasoning. 2–3 minutes.

  3. add the chicken broth (474 ml) and cilantro, cover the pot and let it simmer for 20 minutes.

  4. add the undrained black beans (1 can) and cumin. cook for 15–20 minutes on medium low.

  5. heat sunflower oil (2 Tbsp) in another pan and fry the cut plantain (1)

  6. plate and garnish with cilantro and ricotta cheese
